Day 90 Houston Zoo & New Year's Eve

I've made it to the 3 month mark! Content with my healthy eating and exercise challenge now. 

Exercise: Spin Class at Ballys. The instructor wasn't there due to the Holiday, but I worked out for 45 minutes even harder than usual. I was worried I wouldn't work as hard without an instructor so I really pushed myself. Burned 514 calories.
Walked at the Houston Zoo today.

Breakfast: Corn tortilla with spinach leaves, one boiled egg, plum green tea, raspberries.
Lunch: Made a tuna sandwich. See ingredients below.
Snack: no sugar hot chocolate with my new Flaxmilk.
Lunch #2 at the zoo: one corndog with mustard and french fries.
Snack: banana, few orange slices
Dinner: frozen pizza and a salad to celebrate the New Year.
Tuna Sandwich. Didn't eat the banana.
Very tastey sandwich.

Day 89 Flaxmilk, Goat Cheese and 3 Grocery Stores Later

Exercise: Intense 40 minute run on the elliptical machine at Ballys. Burned 425 calories. 10 minute ab workout. Burned 37 calories.  Spin class yesterday was awesome!

Created my grocery list by looking at some healthy recipe books. I'll share some new recipes that I try this week. I was weasled into buying very expensive Flaxmilk to replace my soy milk. I've heard some news about how soy milk is dangerous due to too much estrogen. It seems like just about everything is bad these days. So I'll try this FlaxMilk, but I can't affort to pay $12.00 per six 32 ounce containers. I feel swindled! What was I thinking?? (pic below)

Needed goat cheese and BBQ sauce for my turkey meatloaf tonight. The BBQ sauce must not have corn syrup. Finally found one brand sweetened with brown sugar instead of corn syrup. I went to several grocery stores and found no goat cheese. Really should have gone to Whole Foods Market, but it was really out of the way. Substituting fetta cheese for goat cheese. I read that very few brands are actually made from goat's milk. Some are made from sheep and cow depending on the brand. Too hungry to care right now.

New recipe for tonight: Turkey Meat Loaf (as seen on the Today Show). Mix turkey meat (I'm guessing a pound), 2 ounces of goat cheese and a little BBQ sauce. I put about an 1/8 cup. May need more. Not sure.
Bake at 350 for 25 minutes. I'll let you know if that works out okay.

Breakfast: 2 left over Christmas tamales. Trying to get rid of them. 2 more left. Green tea.
Lunch: No time to cook. 1 corn tortilla with fajita chicken left over from yesterday. Mixed greens also in the chicken taco. No sugar hot chocolate with soy milk. (soy milk is 100 calories per cup).
Snack: one delicious chocolate almond cluster candy from samples at Costco.
Raspberries with 2 tablespoons plain Greek yogurt
Dinner: Turkey meatloaf, zuccini, salad, red potatoes
Dessert: 2 slices of watermelon



Only 50 calories per cup vs. 100 in soy milk per cup
30% calcium in both.

Day 88 Out On The Town Temptations

Exercise: Spin class at Ballys today! Burned 398 calories in 30 minutes. Arm/Chest weights burned 71 calories.
Last night Vince and I ate out for dinner. I wanted to stop and get dessert everywhere! It was already premeditated that I would get dessert. Just a question of where. We drove to 3 different Starbucks searching for my favorite chocolate brownie, but almost got side-tracked along the way.

I never want donuts! They give me a
huge headache if I eat them before noon.
Wanted one. Drove by and luckily they
were already closed for the evening.
Whew! I was going to get a chocolate
one. 

Ice-cream craving was next. It was a little chilly out
and Vince didn't want ice-cream. I could already
taste the fudge brownie chocolate ice-cream cone.
Not tonight.

Day 87: Working on Killer Abs and Yard Work

Exercise: Daily Ab Workout App. 10 different ab exercises one minute each. Video shows you how to do them. Ballys today. Did the elliptical as if I was running. Burned 319 calories. Used my cardio app. Allows you to not only track calories of the machine you do, but the intensity as well. Today was high intensity for me.

Starting to see an improvement in leg muscles. Must be the elliptical machine and spin class. Want to work on my abs more. Raked leaves in the backyard. Burned 200 calories.

Breakfast: not hungry since we ate late. One boiled egg, green tea
Lunch: see below
Snack: no sugar hot chocolate with soy milk and one corn tortilla, slice of ham, mixed greens, 1/2 avacado.
Dinner: Pei Wei Asian Diner with Vince (See below)
Snack: Went to Starbucks and had their chocolate brownie. Premeditated decision.

Sweet potato with olive oil and some salt.
Mixed veggies, chicken strips with spices.
Water.


Dinner: brown rice, chicken with sauce,
carrots, snow peas, peanuts.
 
 
Raked leaves in the backyard today. Burned 200 calories.

Day 86 Leaves, leaves, leaves!

Exercise: Raked the yard for 4 hours. Arm/back weights yesterday + raking today = achey body. Great workout. Ended up not going to spin class tonight. Needed to just relax.
Calories Burned: almost 600 according to my cardio App.
Forgot to mention that I did an ab workout yesterday using my Daily Cardio Abs App.

Breakfast: Last left over 1/2 tuna sandwich, raspberries, plum green tea.
Snack: Another green tea
Lunch: 2 egg omlette with ingredients below, water
Dinner: 3 1/2 left over beef tamales from Christmas, salad, water
Snack: no sugar hot chocolate and corn tortilla with 2 slices of ham

Day 85 Near Car Crash

Exercise: Weights and Elliptical machine at Ballys.
I returned from the gym today to find our home was nearly driven into.

Excitement of the day was when a teenager lost control of his jeep, drove it up the curb onto our front yard all the way into our bushes. Luckily, he stopped about 5 inches from our dining room windows as my husband watched from another room. Close call, but no damage to our home and the driver was okay. Christmas miracle.

Breakfast: left over 1/2 tuna sandwich, plum green tea
Snack: raspberries
Lunch: left over glutten free lasagna with extra lean turkey meat, water, salad with 12 avacado and tomato
Snack: no sugar hot chocolate with soy milk, 2 biscuts with butter left over from the company. RATS!
Later snack: plum green tea, orange
Dinner: 1/2 salmon, sweet potatoes, greenbeans and mixed veggies, water, buttered wheat bread slice.

Had more lasagna, but ate it before taking the photo.

Day 84 Christmas Day!

Exercise: Walked one mile with Mom and Pops (visiting from Corpus Christi) at Memorial Park. Way to cold, damp and misty. Vince and I jogged about 15 minutes in our neighborhood this evening until my knee hurt again.

Had a difficult time eating well today. So many delicious non-healthy items in the fridge and so many people enjoying them all!

Breakfast: one biscut, corn tortilla, boiled egg wth mixed greens, plum green tea, bits of my sisters bean tamales.
Snack: water, raspberries, couple apple slices.
Snack: Starbucks tall hot chocolate with whipcream.
Lunch: tuna sandwich with a salad on the side (tuna had lots of mayo mixed in, onions, egg, walnuts)
Snack: part of a cupcake
Dinner: Tuna Sandwich, one bean tamale, water

Day 83 Christmas Eve

Exercise: Ran with my brother in our neighborhood this evening. Cold, but exhilerating. Enjoyed running again after some time. Made it 19 minutes and then felt the knee pain again. Walked the rest. I know I need to stay off of it 2 months, but who can do that? Brother came in from Dallas. Nice visit.

It has been a couple days so I'll do my best to remember all I ate.
Breakfast: corn tortilla, boiled eggs with mixed greens, green tea.
Snack: Don't remember. Probably some desserts.
Lunch: Tuna sandwich (I was making them for family coming to watch the football game)
Christmas Eve Dinner: Glutten free lasagna with extra lean turkey meat and low sodium mushroom tomato sauce, way too much ricotta and cheese, mixed veggies, salad with lots of good stuff and olive oil, water. couple sips of wine.
Snack: My sisters fudge, pretzle cookies, more fudge.

I forgot that my brother in law doesn't eat turkey! Woops. He ate the tamales my mom brought. Very fattening!

Day 82 Tantalizing Temptations Avoided

Grocery shopping @ three different stores for Christmas Eve company.
HUNGRY! Mistake. Chaotic traffic. Honking horns. Nuts out there.

Shopping for ingredients for our Christmas Eve dinner. I have relatives coming that refuse to eat veggies, my hubby who only eats glutten free, a Dad who is on low sodium and heart healthy foods, but eats poorly anyway, and then there is me who is trying to just do better. Not sure how to cook for that kaleidoscope. Details tomorrow!

Hoping to do the Jillian workout on DVD this evening. Still need to finish laundry, sweep all floors and mop the kitchen and baths not to mention clean the kitchen and baths.

Day 81 Spin Class Makes My Day!

Exercise: Spin Class. Difficult....LOVE IT!
Calories: Burned 664




Unfortunately I began eating the black bean corn chips that are for our Christmas guests. Now I have to buy more. 


Breakfast: corn tortilla with almond butter, green tea, red grapes

mixed greens, organic corn, green beans. Grapes for dessert. Water
Snack: lots of corn chips!
Dinner: wheat tortilla chicken taco and corn tortilla chicken taco with mixed greens
Snack: Corn chips AGAIN. Very addictive.

Day 80 Christmas Rush At the Mall

Exercise: Going to Ballys to workout this evening. Plan to do weights and bike or elliptical machine. Can't wait for my spin class tomorrow!

Really?....20 minutes to find a parking spot! It is nuts out there. Been cooped up at home last several days. Good to get out, but amazed at all the rush and crowds. Finally I just parked at Ballys across the street from the mall and parked there. Easy and about a 1 minute walk.

Breakfast: One corn tortilla, one egg, green tea, grapes, cherries
Snack: no sugar hot chocolate with soy milk
Lunch: 1/2 salmon, avacado on mixed greens, spices, water
Dinner: chick fil a sandwich from the mall. Came home and at a 2 carrot cake cupcakes from last night. Soy milk.

Day 79

Exercise: None, due to neck pain. Getting better.

Breakfast: 2 corn tortillas, one egg, green tea, grapes and cherries
Snack: no sugar hot chocolate with soy milk
Lunch: Salmon, salad, avacado, little quinoa, water
Dinner: At a Toastmasters function....chips, salsa, cookie, water
Snack: popcorn popped on the stove with my hubby's secrets spices

Day 78 Some Soup Recipes and More

No Exercise due to second day of stiff neck and back. Getting better though.

Breakfast: corn tortilla, one egg, green tea

Lunch: small amount of left over mixed veggies with small chunks of chicken, left over pizza slice, water

Day 77 Crick In The Neck and Pizza

Thin, flat pillows are best for me. My current pillow was getting too flat so I switched to a higher one last night. Wrong move! 3am/ Major neck pain pain. Woke up to discomfort and still going strong. I expect it will last a couple days. So I decided to feel sorry for myself as I laid around all day moving from couch to chair, icy hot patch to hot pad on my back. Pizza was a must. Tried to be good for a while, but by dinner the pity party set in. Feeling like I'm gaining weight due to quite a number of endulgences these last few days.

We have been working on selecting our wedding photo album photos for the last 10 hours and are pretty much going crazy. We are starting over from square one to try and get our album again. Been almost 3 1/2 years of photo trouble (but that is for another blog!). Stressed.

Breakfast: Corn tortillas, one egg, avadcado, green tea
Vince acutally ate my orange.

Day 76: 5 Mile Walk

Exercise: Walked 5 Miles

Nice to get out to the park again! Cool, crisp air. Missed the sunshine though. We walked 5 miles. Really wanted to run, but worked hard to ignore the tempation. Trying to wait another week or so before I pick it back up again. Can't wait until next Thursdays Spin Class again! Have to miss Tuesday for an event. Bummer.

Didn't eat well today! Just wanted to veg out and eat everything in sight! First day of vacation temptations I guess.

Breakfast: 1 corn tortilla, one egg, green tea
Snack: no sugar hot chocolate with soy vanilla milk
Lunch: About 3 slices of homemade bread someone made me with lots of butter, chocolate chips, toffee chips, salmon patty, broccoli and mixed veggies, water
Dinner: Broke down and bought a frozen dinner! Been maybe over 7 years since I've had a frozen dinner! I just don't think packaged foods are healthy. We shopped for groceries very late tonight and I was hungry.
Snack: about to have some cherries and grapes

Day 75 Last Day Before Christmas Vacation!

I made it to this day! What a whirlwind of a week! Our staff cookie exchange was today. People make cookies and share with others. Cookies fill an entire room. It's a cookie feast. I enjoyed a few different ones myself. Not the healthiest day today!

Breakfast: 2 corn tortillas, one egg, green tea.
Snack: apple sauce
Lunch: At a meeting off campus. The district brought in Mexican food for us. One fajita chicken in tortilla, beans, and rice, corn chips, a bit of salsa and queso. A delicious filling not so healthy lunch. Loved it!
Snack: Back at work and had some of those cookies.
Dinner: Subway sandwich, but put the meat etc in a tortilla because the bread got soggy.
Snack: chocolate chips!

Day 74 SPIN CLASS IS AMAZING!

Exercise:
The loud music, the motivation, sweat dripping all over...talk about a great workout! You pedal slow, fast, you pedal standing and sitting, you add and take away resistance. It is difficult and invigorating! My headache went away. I felt like I really worked hard afterwards and according to my cardo app I burned about 600 calories in 45 minutes.

Thank you Sissy for motivating me to go. I wasn't feeling well and had to go home after work to take a nap, but I made myself go to the spinning class because I knew you would ask me about it later. I felt so much better after!

Day 73 Desserts Surrounding Me ALL Day

I didnt' eat any desserts...well, okay I did eat one very small chocolate truffle.

My work environment is an elementary school so you can imagine all the food and desserts around Christmas time. Our last day is Friday so the desserts keep piling in! Today there were boxes of cookies, every kind of chocolate you could desire, a large box of donuts, potato chips platters and more. I'm sure I would gain 5-10 pounds BEFORE the holidays if I ate all the goodies every day. It is very tempting.

Breakfast: scrambled eggs with spinach leaves, green tea with lemon
Snack: one carrot
Lunch: 1/2 an almond butter sandwich, cup of stew (stew meat, carrots, white potatoes), 1/2 a pear, water
Dinner: about to eat a lot of stew and make a salad with olive oil and apple cider vinegar.

Day 72 In Court Today

Spent most of the day in mediation in court to work on getting our wedding photo album from a few years ago. (But that is another blog story!)
Ate at 7am and was not given a lunch or any snacks. STARVING and in a fowl mood. You do know what that means don't you? Of course...hamburger and Dr. Pepper. Yep. My stomach has a mind of its own if it isn't fed properly. So I guess I lied in a previous blog entry when I thought my DP cravings were gone. They are only gone if I maintain a proper diet and have a full stomach. Seriously, I didn't even like the DP. The PUNCH I normally get from drinking DP just wasn't there, but now that I've gone to the other side again I'm thinking of DPs again.

Great news though. I ate well yesterday and worked out a lot. Lost 1 pound this morning. I'm sure the burger and sweet potato fries I had today changed that.

Breakfast: 2 corn tortillas, scrambled eggs with spinach leaves, green tea
Lunch: None
Late Lunch: bacon cheeseburger, lots of sweet potato fries and one Dr. Pepper
Dinner: nothing yet. Not hungry, but plan to make some stew for tomorrow's lunch so may have some of that.

Day 71 Ran Anyway!!! Hurt Again...RATS!

Many of you know I am supposed to wait a couple weeks before I run again due to my knee injury. The waiting is sheer torture! It felt good for an entire week. The elliptical was getting old. I needed the rush of THE RUN! So it happened. I crept up on the treadmill with the intention to fast walk. Ever so slowly, my mind began toying with the idea of just jogging slightly...sort of jogging or something rather. My legs began to run without my approval!

11 minutes into the run and it was all over. The same "outside knee issue" returned with a vengence! Downhill from there. Sad.   : (  Hobbled down the stairs and went home. Fine now. I just don't get it. Why am I having this knee pain.

Realization: Upon analyzing my Cardo App. I noticed I burned so many more calories in November than in December, yet I am at the gym more often. Apparently, I burned more than double by running at the 3 mile park than lifting weights and playing around with the treadmill. I miss the park. I miss those runs. Will I ever return?

I'm done with the desserts! If I can't run for a while, I'm stepping up my diet! I really have been cheating often lately.

Why all the concern you ask? Well, I had lost 6 pounds only to wake up this morning and discover I gained 2 pounds back! Rats!

Breakfast: 2 corn tortillas, one boiled egg, green tea
Snack: some crackers a friend gave me (about 1/2 a sandwich baggy full)
Lunch: Little bit of sweet potatoes, 1/4 of chicken breast, almond butter sandwich, water
Sanck: Pear
Snack: sugar free hotchocolate with vanilla soy milk
Dinner: chicken tacos, spinach leaves, low carb tortillas, tomato, fetta cheese, carrot on the side.

Day 70 Delicious Soup

Exercise: Ballys - Eliptical machine 30 minutes, weights 20 minutes, treadmill for 1 mile (fast walking). Ony 2  more weeks before I can run again. Enjoying the elliptical machine. It's like running on the clouds!

Day 69: Friend's Mom Memorial Today

Strange to have been to 3 funerals since I started this blog. Been a little over 2 months. Gone most of the day so no exercise again.

Breakfast: one boiled egg, green tea
Lunch: salmon patty sandwich with spinach leaves
Dinner: (on way back from the service) stopped at Mexican restauant. 3 flour tortilla fajita tacos with all the bad stuff. Chips. Water and shared a cheesecake slice of all things.

Felt overly full all the way home. Then Vince made me some hot chocolate. Drank it. Super full and uncomfortable. Not used to eating so much. Vince said he will go to the gym with me tomorrow. We shall see.

Day 68: Grilled Cheese Heaven

No exercise today!

Can you taste it? Two breads slathered in butter with melted warm cheese oozing out of all sides! I LOVE grilled cheeses! Friday night. Tired. Craving a grilled cheese. We never have cheese in the fridge and rarely use butter, but had some left over from Thanksgiving day.

Breakfast: 2 corn tortillas, one boiled egg, spinach leaves, green tea and blueberries.
Finally, the organic frozen blueberries are back! Be still my heart!

Day 67: Ate Out Twice In One Day!

Exercise: Worked very hard at Ballys. Ellipical for 30 minutes, weights for 25 minutes, walked 1.25 miles on treadmill.

Forced to eat out due to lack of planning and circumstances! I'm at a strange moment in time. The desire to eat out has lessened greatly. Didn't really want to eat out the second time today and shockingly, my unnatural cravings for Dr. Pepper have subsided.

Was working off-campus at another school today. Took plenty of healthy snacks. I arrived at the Middle School to find what else, but candy on the tables. I ate some. Then I ate my carrot. Also ate my almond butter sandwich, but was still so hungry. We were grading the entire school districts 4th grade writing practice tests so I needed more food. Starving close to 1pm. Made a Whataburger run, which was conveniently located nearby.

Breakfast: 2 blueberry whole grain waffles with walnuts and blue agave. (no eggs in the house!)
Snack: small package of peanut M&Ms, one lifesaver, a whole carrot
Lunch: almond butter sandwich
2nd Lunch: Whataburger with cheese, small fries, WATER
Dinner: 1/2 a pear or less, salad, way too much PIZZA.
Late Night: munched on toffee chips from when I made desserts last couple days. The horror.

My husband surprised me with a Groupon worth $10 for pizza so I felt like I really had to eat the pizza, but I didn't really want to. I was just happy we were going out though. 

Not looking forward to the scale tomorrow!

Exercise: About to do some mountain climbers, jumping jacks, push ups, sit ups and bear crawls in the living room. Too cold and damp to head to the park.

Day 65

Exercise: None Today

Breakfast: 2 corn tortillas, one boiled egg, green tea
Snack: applesauce, raspberry tea
Lunch: Leftovers from last night
Snack: Visited a friend. She made me a delicious "trash treat." Ate it on my drive home.
            It has some sort of cocoa powder mixed in and tasted peanut butterie.
Dinner: Not too hungry. I wonder why!! Darn treats. Ate the same as breakfast and a pear, water.
Sort of want a burger now late at night as I watch the Biggest Loser.

Need to cook lunch for tomorrow, but really feel like just going to bed early!

From last night: Same for lunch, but less and a few bites
of pasta with tomato, spinach and bit of canned chicken.

Day 64: Made More Holiday Treats

Exercise: Bally's arm, back, abs. Some cardio, but still can't run.  : (

Breakfast: The fiber cereal
Snack: no time
Lunch: pasta with chicken, mixed greens with tomato and carrots, pear
Dinner: Broccoli, asparagus, sweet
potato, mixed green with chicken.

Day 63: My Christmas Desserts and More...See Pics

These are my sisters. Mine are made
with spice cake and have cream cheese
frosting. Can use carrot cake too. Brown frosting
makes more sense than white though. 

I ate so much of the dessert ingredients while making the goodies that I felt sick! Too much sugar gives me a headache. One would think that would be a deterrent, but it isn't. I was again one pound from my goal weight and totally sabotaged it tonight!
Trash Cookies: chex mix cereal, pecans,
pretzels, almond bark (white chocolate)
chocolate fudge with walnuts

Recipes:
Exercise: Bally's. Some weights and 15 minutes run. Left side of leg at knee really hurting. Can't even do lunges without feeling pain. 

Running Plan: Stop running for 3 weeks to improve. The horror! Really disappointed. Will focus on the gym and eliptical machine until Christmas. Will miss the park!!



Breakfast: 2 corn tortillas, boiled egg, green tea, 1/2 pear sliced
Lunch: Went to Georgia's Farm Market: see pics below.
Snack: All the dessert ingredients. No control.
Dinner: Home at 8:30pm. Too hungry to cook: Ate what I had for breakfast again.

Day 62: ALERT! The Cereal Causes .........!!

How do I say this? Hmmmm, I'll just say it. Beware of the new cereal I bought. It causes all day GAS and a bloating feeling. I guess they are right when they claim you will feel full. I still feel uncomfortable the next day.

Ate cereal yesterday morning
and the night before as a small
snack.

Today:
Breakfast: Back to my same ol' 2 corn tortillas, one boiled egg, green tea


Out of spinach so I used mixed greens.
Also always put a bit of olive oil and a
little salt since we don't really eat much
salt.
Craving a hamburger so I made my own.
Lunch: hamburger: patty, cheese, mixed greens, red onions, olives. (no dressing). whole grain bread.
no sugar hot chocolate with vanilla soy milk.

Snack: lollipop from the haircut place. Great Clips...always $13.99. Why spend more?
Dinner: Salad: asparagus, sweet potato, greens, 1/2 avacado, walnuts, chicken, fetta cheese, olive oil and spices. 1/2 small orange.
No sugar hot chocolate with vanilla soy milk.

Day 61: Ate The Cereal/Holiday Snacks

Exercise: Walk/jogg 3 miles at Memorial Park later this evening. More walking. My leg is acting funny. My entire shin bone seems to ache a bit when I run. Could it be a tiny stress fracture? Am I becoming a hypochondriac concerned about injuries all the time?? What's with that!!??


Breakfast: Yes, I ate the cereal after all! Vanilla soy milk and raspberries.
Snack: small orange, too many Ritzs crackers
Lunch: 1/2 almond butter sandwich, lentil soup from yesterday, Greek yogurt with 1/2 a pear, raspberry tea
Snack: too many Ritz crackers
Dinner: Before our run: cup of lentil soup, 2 corn tortillas with cheese (yikes).
              Late Dinner: sweet potatoes, 1/2 salmon, asparagus (bought lots of asparagus!)

Yummy snacks for the staff. Only had
1/2 of a piece of brownie cake.
Late Dinner. If I eat too
early I tend to eat again.
Need to get better at my
snacks after work
